This shortbread is amazing, slightly sweeter than normal shortbread it's perfect for the festive season, but I would happily bake these sugary biscuits all year round!
You will need;
- 125 grams caster sugar
- 300 grams of plain flour
- 215 grams of softened butter
- Vanilla extract
Pop the flour in your mixing bowl and add the softened butter in small cubes, about the size of a dice. Then start to gently smush and rub the butter into the flower, after a little bit it should start to look a bit like you have a bowl full of bread crumbs.
You then need to add a few drops of vanilla extract and knead all of the mixture into a ball of dough. (TOP TIP: if your mixture is not coming together properly add small amounts of butter and knead in until it comes together into a ball). Wrap your dough in cling film and pop in the fridge between 40-60 mins.

After about 40 mins you need to lightly flour your work surface (after making sure it is clean, also at this point you want to preheat your oven to 150 degrees C. Lift your dough out of the fridge and place on the floured surface ready to roll, rub a small amount of flour on your rolling pin to make sure the dough doesn’t stick and proceed to roll the dough to between 0.5-1 cm. Cut your shapes out and place on a baking tray lined with baking paper, pop in the oven for between 20-30 mins being sure to check up on them every 5 mins!
Lift them out and let them cool, once they have cooled sprinkle a bit of icing sugar over the top for extra sweetness and they’re done. Perfect for parties or just munching whilst reading your favourite blogger!
